First Sunset of 2016!!


IMG_3690.jpgWe spent the afternoon at Hurricane Ridge last weekend and stayed to watch the sunset, the colors were a beautiful blend of gold, peach, pink, and lilac!! Happy New Year!

Which, it will be if you make these delicious (and oh so easy) meringues! Seriously, they only take a few minutes and 4 ingredients to make. If you are looking for a versatile and an easy dress-up to impress dessert, continue on!

You will need:

3 room temperature egg whites

3/4 cup of superfine or powdered sugar

1/4 teaspoon pure vanilla extract

1 pinch of cream of tartar


Preheat oven to 200* F. Beat the egg whites on medium speed until foamy. Add sugar slowly as egg white beat on medium high speed. Once the sugar is incorporated, continue to beat the egg whites until the peaks are stiff and satiny. Then mix in the cream of tartar on slow speed, followed by the vanilla. With a spatula, put the meringue into a pastry bag and squeeze out onto a baking pan lined with parchment paper. Bake the meringues at 200*F for 45 minutes. Depending on the size, they will need more time. For example, a pan of one serving sized nests needed 45 more minutes for me at 200* F. You will know the meringues are done when they are barely golden, and sound hollow when tapped.

Meringue can take on many shapes, so don’t be afraid to play around! You can make large or small nests to fill with toppings or cookie-sized bites to dip in chocolate. Meringue has a very delicate flavor that can be modified with extracts or spices. Try topping your nests with lemon curd & culinary lavender buds, or crème fraîche & seasonal berries. My mom always makes a large, heart shaped meringue on Valentine’s Day topped with cherries and whipped cream, yum!
